A light and fluffy angel food cake made with egg whites and sugar.

- 1 cup egg whites (about 8 large eggs)
- 1 cup granulated sugar
- 1 cup all-purpose flour (sifted)
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C). Prepare an ungreased tube pan.
- In a clean mixing bowl, whip egg whites until foamy. Gradually add sugar while continuing to beat until stiff peaks form (about 5-7 minutes).
- In another bowl, sift together flour, baking powder, and salt. Gently fold the dry mixture into the whipped egg whites using a spatula.
- Drizzle in vanilla extract and fold gently until fully incorporated.
- Pour the batter into the tube pan, smoothing the top. Bake for 30-35 minutes or until golden brown.
- Invert the pan onto a wire rack immediately to cool completely upside down.
Notes
- Ensure that the mixing bowl and whisk are completely clean to achieve maximum volume in the egg whites.
- Do not grease the tube pan, as the cake needs to cling to the sides to rise properly.
