Description

A delicious apple filling perfect for pies or jars.


Ingredients

  • 6 cups peeled, cored, and sliced firm apples
  • 1 cup apple cider or water
  • 0 cups granulated sugar

  • 1 teaspoon ground cinnamon

  • 0 teaspoons ground allspice (optional)
  • 0 teaspoons fine sea salt
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons unsalted butter

Instructions

  1. Peeled, core, and slice the apples into even 1/4-inch slices and set them aside.
  2. In a large saucepan, whisk together the apple cider or water, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, allspice, and salt until no dry streaks remain.
  3. Place the saucepan over medium heat and cook, whisking often, until the mixture comes to a gentle simmer and thickens into a glossy syrup, about 3–5 minutes.
  4. Stir in the sliced apples, making sure they are well coated in the thickened syrup. Reduce heat to medium-low.
  5. Cook the apples, stirring frequently, for 8–10 minutes, or until they are tender but still hold their shape and look slightly translucent around the edges.
  6. Remove the pan from the heat and stir in the lemon juice, vanilla extract, and butter until the butter has melted and the sauce is smooth and silky.
  7. Taste and adjust the flavor with a little extra lemon juice or cinnamon if desired.
  8. Let the filling cool until just warm before using in a pie, or cool completely and transfer to jars or airtight containers for storing in the refrigerator or freezer.
