- 1/2 cup creamy peanut butter
- 1/3 cup plain Greek yogurt
- 1/4 cup honey or maple syrup
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/3 cup chocolate chips (optional)
Instructions
- Prepare the Pan: Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment and lightly grease.
- Mix Wet Ingredients: Whisk peanut butter, Greek yogurt, honey (or maple syrup), brown sugar, egg, and vanilla until smooth.
- Combine Dry Ingredients: In another bowl, whisk flour, baking powder, cinnamon, and salt.
- Form Batter: Add dry ingredients into wet mixture. Stir gently until just combined. Fold in chocolate chips if using.
- Spread Batter: Transfer batter into prepared pan and smooth evenly.
- Bake: Bake 20–25 minutes until edges are lightly golden and center is set but soft.
- Cool and Slice: Cool completely before slicing into thick squares.
Notes
- For a richer flavor, use natural peanut butter.
- Store leftovers in an airtight container at room temperature.
