A delicious and creamy fettuccine dish made with low-fat cottage cheese, Parmesan, and garlic.

- 8 ounces fettuccine noodles (or pasta of choice)
- 1 container (16-ounce) low-fat cottage cheese (about 2 cups)
- 1/2 cup grated Parmesan cheese (plus additional for serving)
- 1/2 cup milk (2%)
- 1 clove garlic (roughly chopped, about 1 teaspoon)
- as needed Kosher salt
- Chopped fresh parsley
- Freshly ground black pepper
Instructions
- Bring a large pot of salted water to a boil. Cook pasta according to package instructions and reserve 1 cup of the pasta cooking liquid before draining.
- In a blender, combine the cottage cheese, Parmesan, milk, and garlic. Blend until smooth.
- Pour the cottage cheese sauce into a skillet, add the drained noodles, and gently toss over low heat. If necessary, thin with reserved pasta water.
- Taste and adjust with salt. Serve topped with parsley and extra Parmesan.
