Description

A delicious and creamy fettuccine dish made with low-fat cottage cheese, Parmesan, and garlic.


Ingredients

  • 8 ounces fettuccine noodles (or pasta of choice)
  • 1 container (16-ounce) low-fat cottage cheese (about 2 cups)
  • 1/2 cup grated Parmesan cheese (plus additional for serving)
  • 1/2 cup milk (2%)
  • 1 clove garlic (roughly chopped, about 1 teaspoon)
  • as needed Kosher salt
  • Chopped fresh parsley
  • Freshly ground black pepper

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions and reserve 1 cup of the pasta cooking liquid before draining.
  2. In a blender, combine the cottage cheese, Parmesan, milk, and garlic. Blend until smooth.
  3. Pour the cottage cheese sauce into a skillet, add the drained noodles, and gently toss over low heat. If necessary, thin with reserved pasta water.
  4. Taste and adjust with salt. Serve topped with parsley and extra Parmesan.
