Instructions
- Prepare your ingredients by peeling and dicing the sweet potatoes. Grate the fresh ginger.
- In a large pot over medium heat, drizzle olive oil and sauté chopped onions and minced garlic until fragrant.
- Add curry powder and grated ginger, stirring for one minute to enhance flavors.
- Incorporate diced sweet potatoes, red lentils, vegetable broth, and coconut milk; stir well.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 20-25 minutes until sweet potatoes are tender.
- Stir in spinach or kale just before serving until wilted.
