- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 large yellow onion, chopped
- 2 tbsp sweet paprika
- 2 cups low-sodium chicken broth
- 1 cup sour cream
- 2 tbsp vegetable oil (or olive oil)
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt and pepper. Sear the chicken for about 5 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add chopped onions and minced garlic; sauté for 3-4 minutes until translucent.
- Stir in sweet paprika and toast for about 30 seconds to enhance flavor.
- Pour in low-sodium chicken broth while scraping the bottom of the pan to release browned bits; bring to a gentle simmer.
- Return the seared chicken to the skillet, cover, and let simmer for 20-25 minutes until cooked through.
- Remove from heat and stir in sour cream until smooth. Adjust seasoning as needed before serving.
