Ingredients

- 3–4 boneless, skinless chicken breasts (about 1 lbs)
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 teaspoons chili powder
- 8 flour or corn tortillas
- 1 cup shredded cheddar cheese
- Sour cream (optional for dipping)
Instructions
- Cook the chicken: Place the chicken breasts in a pot with water. Bring to a boil over medium-high heat and cook until no longer pink (about 15 minutes). Drain and shred.
- Sauté the filling: In a skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent (about 5 minutes). Stir in minced garlic and cook until golden.
- Season: Add chili powder, salt, and pepper to the onion-garlic mixture. Incorporate the shredded chicken and mix until heated through.
- Assemble taquitos: Lay shredded cheese on each tortilla, add the chicken mixture, then roll tightly.
- Fry: Heat oil in a skillet over medium-high heat. Fry each taquito seam-side down until golden brown (about 2-3 minutes per side).
- Serve hot with sour cream for dipping.

- These taquitos can be baked instead of fried for a healthier option.
