Description
Delicious and healthy cauliflower patties that are perfect as a side dish or a snack.
Ingredients

- 1 medium head cauliflower (about 3 cups riced)
- 2 large eggs
- 1 cup sharp cheddar cheese, shredded
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil or coconut oil
Instructions
- Prepare cauliflower by removing leaves and cutting into florets. Steam or microwave until tender.
- In a food processor, pulse the steamed cauliflower until it resembles rice.
- Squeeze out excess moisture using a clean kitchen towel.
- In a bowl, mix riced cauliflower with eggs, cheddar cheese, onion powder, garlic powder, salt, and pepper until well combined.
- Form the mixture into patties about half an inch thick.
- Heat oil in a skillet over medium heat and fry patties for 4-5 minutes on each side until golden brown.
Notes
- These patties can be served with a dipping sauce of your choice.
- They can also be made in advance and reheated.
