Description

Delicious and healthy cauliflower patties that are perfect as a side dish or a snack.


Ingredients

Scale
  • 1 medium head cauliflower (about 3 cups riced)
  • 2 large eggs
  • 1 cup sharp cheddar cheese, shredded
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil or coconut oil

Instructions

  1. Prepare cauliflower by removing leaves and cutting into florets. Steam or microwave until tender.
  2. In a food processor, pulse the steamed cauliflower until it resembles rice.
  3. Squeeze out excess moisture using a clean kitchen towel.
  4. In a bowl, mix riced cauliflower with eggs, cheddar cheese, onion powder, garlic powder, salt, and pepper until well combined.
  5. Form the mixture into patties about half an inch thick.
  6. Heat oil in a skillet over medium heat and fry patties for 4-5 minutes on each side until golden brown.

Notes

  • These patties can be served with a dipping sauce of your choice.
