Description

This delicious crock pot recipe combines beef sirloin and cheese tortellini in a creamy sauce for a comforting meal.


Ingredients

  • 1 1/2 pounds beef sirloin steak, thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika or smoked paprika
  • 8 ounces cream cheese, softened and cut into cubes
  • 2 cups shredded provolone cheese (or mozzarella)
  • 20 ounces refrigerated cheese tortellini
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Spray a 6-quart crock pot with nonstick cooking spray or line it with a slow cooker liner.
  2. Add the thinly sliced beef sirloin, yellow onion, green bell pepper, red bell pepper, and minced garlic to the crock pot, spreading everything into an even layer.
  3. In a medium bowl, whisk together the beef broth, Worcestershire sauce, Italian seasoning, kosher salt, black pepper, and paprika. Pour this mixture evenly over the beef and vegetables.
  4. Cover and cook on LOW for 4–5 hours, or until the beef is very tender and the vegetables are soft. Begin checking around the 4-hour mark.
  5. Once the beef is tender, stir in the cubed cream cheese until it melts into the hot broth. Add the shredded provolone cheese and stir again until the sauce is smooth and creamy.
  6. In a small bowl, whisk together the cornstarch and water to make a slurry. Stir the slurry into the sauce, then cover and cook on HIGH for 5–10 minutes to let the sauce thicken slightly.
  7. Add the refrigerated cheese tortellini to the crock pot and gently stir to coat it in the creamy cheesesteak sauce, making sure the pasta is mostly submerged.
  8. Cover and cook on HIGH for 20–25 minutes, or until the tortellini is tender but not mushy. Start checking around 15–20 minutes to avoid overcooking.
  9. Taste and adjust seasoning with additional salt and pepper if needed.
  10. Garnish with chopped fresh parsley and serve the Crock Pot Cheesesteak Tortellini hot straight from the slow cooker.
