Description

A delightful dessert featuring puff pastry filled with whipped cream and fresh strawberries.

Ingredients

Scale
  • 1 sheet ready to roll puff pastry
  • 1 egg wash (1 egg + 1 tablespoon of water)
  • 12 cups heavy/double cream
  • 35 tablespoons sugar
  • 1 cup fresh strawberries sliced
  • Icing sugar for dusting

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. While the oven heats, let your puff pastry sheet thaw according to package instructions if frozen.
  3. Unroll the puff pastry onto a lightly floured surface and cut into 8-10 equal rectangles or squares.
  4. Transfer them to your prepared baking sheet, leaving about an inch between each piece.
  5. Prepare the egg wash by beating 1 egg with 1 tablespoon of water until well combined.
  6. Using a pastry brush, gently coat the top of each pastry piece with the egg wash, being careful not to let it drip down the sides.
  7. Bake in the preheated oven for 15-18 minutes until the pastries have risen and turned a beautiful golden brown.
  8. Remove from the oven and carefully transfer the pastries to a wire rack to cool completely.
  9. While the pastries cool, pour the cold heavy cream into a large mixing bowl and whip until it begins to thicken.
  10. Gradually add 3-5 tablespoons of sugar (depending on your sweetness preference) and continue whipping until stiff peaks form.
  11. Once the pastries are completely cool, split them horizontally with a serrated knife.
  12. Generously spread or pipe the whipped cream onto the bottom half, then arrange sliced strawberries over the cream.
  13. Place the top half of each pastry over the filling and dust with icing sugar just before serving.
