A delightful dessert featuring puff pastry filled with whipped cream and fresh strawberries.

- 1 sheet ready to roll puff pastry
- 1 egg wash (1 egg + 1 tablespoon of water)
- 1–2 cups heavy/double cream
- 3–5 tablespoons sugar
- 1 cup fresh strawberries sliced
- Icing sugar for dusting
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- While the oven heats, let your puff pastry sheet thaw according to package instructions if frozen.
- Unroll the puff pastry onto a lightly floured surface and cut into 8-10 equal rectangles or squares.
- Transfer them to your prepared baking sheet, leaving about an inch between each piece.
- Prepare the egg wash by beating 1 egg with 1 tablespoon of water until well combined.
- Using a pastry brush, gently coat the top of each pastry piece with the egg wash, being careful not to let it drip down the sides.
- Bake in the preheated oven for 15-18 minutes until the pastries have risen and turned a beautiful golden brown.
- Remove from the oven and carefully transfer the pastries to a wire rack to cool completely.
- While the pastries cool, pour the cold heavy cream into a large mixing bowl and whip until it begins to thicken.
- Gradually add 3-5 tablespoons of sugar (depending on your sweetness preference) and continue whipping until stiff peaks form.
- Once the pastries are completely cool, split them horizontally with a serrated knife.
- Generously spread or pipe the whipped cream onto the bottom half, then arrange sliced strawberries over the cream.
- Place the top half of each pastry over the filling and dust with icing sugar just before serving.
