Ingredients

  • 2 pounds Russet Potatoes
  • 1/2 cup Unsalted Butter
  • 1/2 cup Heavy Cream
  • 1 large Egg Yolk
  • to taste Salt
  • to taste Ground Pepper
  • 1/4 cup Grated Cheese
  • to taste Fresh Herbs

Instructions

  1. Prepare the Potatoes: Peel and cut your starchy Russet potatoes into equal-sized chunks. Boil them in salted water until tender (about 15-20 minutes).
  2. Mash and Mix: Drain the potatoes thoroughly, then mash them until creamy. Blend in the butter, heavy cream, salt, and pepper until smooth. If using, fold in the egg yolk.
  3. Pipe the Potatoes: Transfer the creamy potato mixture into a piping bag fitted with a large star tip. Pipe decorative swirls onto a parchment-lined baking sheet.
  4. Bake: Preheat the oven to 400°F (200°C). Bake the piped potatoes for 15-20 minutes until golden brown and crispy.
  5. Serve: Garnish as desired and serve warm.
