- 2 pounds Russet Potatoes
- 1/2 cup Unsalted Butter
- 1/2 cup Heavy Cream
- 1 large Egg Yolk
- to taste Salt
- to taste Ground Pepper
- 1/4 cup Grated Cheese
- to taste Fresh Herbs
Instructions
- Prepare the Potatoes: Peel and cut your starchy Russet potatoes into equal-sized chunks. Boil them in salted water until tender (about 15-20 minutes).
- Mash and Mix: Drain the potatoes thoroughly, then mash them until creamy. Blend in the butter, heavy cream, salt, and pepper until smooth. If using, fold in the egg yolk.
- Pipe the Potatoes: Transfer the creamy potato mixture into a piping bag fitted with a large star tip. Pipe decorative swirls onto a parchment-lined baking sheet.
- Bake: Preheat the oven to 400°F (200°C). Bake the piped potatoes for 15-20 minutes until golden brown and crispy.
- Serve: Garnish as desired and serve warm.

- Choose starchy varieties of potatoes for fluffiness.
- Whole milk can be substituted for heavy cream.
- Gruyère or Parmesan cheese can be used for added flavor.
