Ingredients

- 2 slices sourdough bread (or your choice of bread)
- 1 ripe avocado
- 1 egg
- Salt, to taste
- Pepper, to taste
- Lemon juice, to taste
- Chili flakes (optional)
- Vinegar (optional, for poaching)
Instructions
- Fill a small pot with water, about 2 to 3 inches deep, and bring to a gentle simmer.
- Add a small splash of vinegar if desired to help the egg whites set.
- Crack the egg into a small bowl for easy sliding into the water.
- Stir the water gently to create a soft swirl, then slide the egg into the center.
- Cook for 3 to 4 minutes for a runny yolk, adding an extra minute for a firmer texture.
- Remove the poached egg out with a slotted spoon and dab the bottom on a paper towel to remove excess water.
- Mix the avocado with salt, pepper, and lemon juice, then spread it on the toasted bread.
- Top with the poached egg and season again with salt and pepper, plus chili flakes if desired.
