Description

A delicious stir-fry featuring rice noodles, lean ground beef, and colorful vegetables, all coated in a spicy firecracker sauce.


Ingredients

  • 8 oz rice noodles
  • 1 lb lean ground beef
  • 2 tablespoons vegetable oil
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 2 medium carrots, julienned
  • 1/4 cup firecracker sauce (chili sauce, soy sauce, sriracha, brown sugar mix)
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  1. Cook rice noodles according to package instructions. Drain and set aside.
  2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if needed.
  3. Push the beef to the side and add remaining oil, broccoli, red bell pepper, carrots, and garlic. Stir-fry for 3-4 minutes until veggies are crisp-tender.
  4. Add the firecracker sauce to the pan and stir to coat the beef and vegetables. Simmer for 2-3 minutes until sauce thickens.
  5. Add cooked noodles to the pan and toss everything together until well combined and heated through.
  6. Serve in bowls, topped with sliced green onions and toasted sesame seeds.
