Delicious and nutritious banana pancakes made with cottage cheese and oat flour.
Ingredients

- 1 ripe banana, mashed
- ½ cup cottage cheese
- 2 large eggs
- ½ cup oat flour
- ½ teaspoon baking powder
- ½ teaspoon vanilla extract
- As needed Butter or oil for cooking
Instructions
- Mash the ripe banana until mostly smooth with a few small lumps remaining.
- Add cottage cheese, eggs, and vanilla. Whisk well or blend for 20–30 seconds for a smoother texture.
- Stir in oat flour and baking powder. Mix gently and rest for 3–5 minutes.
- Preheat a non-stick skillet over medium-low heat and lightly grease.
- Scoop ¼ cup batter per pancake. Cook 2–3 minutes per side until golden and cooked through.
- Stack and top with banana slices and maple syrup.
Notes
- For extra flavor, consider adding cinnamon or nutmeg.
- Serve pancakes warm for the best texture.
- These pancakes freeze well; store in an airtight container.
