Instructions

  1. Prepare the sauce: In a small bowl, whisk together soy sauce, sesame oil, cornstarch, and water. This is your flavorful stir fry sauce—it’s savory, slightly nutty, and helps everything come together with a light glaze.
  2. Cook the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced chicken, season with salt and pepper, and cook until golden and no longer pink in the center, about 5–6 minutes. Transfer to a plate and set aside.
  3. Sauté the veggies: In the same skillet, add the remaining tablespoon of olive oil. Add the garlic, bell pepper, and carrot. Stir-fry for about 2–3 minutes until just tender and fragrant.
  4. Add zucchini noodles: Toss in the spiralized zucchini and stir-fry for another 2–3 minutes. You want the zucchini to be just tender but still have a bit of bite—overcooking will make them soggy.
  5. Combine and sauce: Return the cooked chicken to the pan. Pour in the stir fry sauce and toss everything to coat evenly. Cook for 1–2 more minutes until the sauce thickens slightly and clings to the chicken and veggies.
  6. Garnish and serve: Sprinkle with sesame seeds and chopped green onions. Serve immediately for best texture and flavor.
