- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 3 large eggs
- 1 1/2 cups milk
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter (plus more for greasing the pan)
- 1/2 cup chopped dark chocolate or chocolate chips
- 1/4 cup heavy cream
- Powdered sugar (for dusting)
- Fresh berries (for garnish)
- Crushed nuts (for garnish)
- Whipped cream (for garnish)
Instructions
- In a mixing bowl, whisk together the flour, sugar, and salt.
- In a separate bowl, beat the eggs, milk, and vanilla until smooth.
- Gradually pour the wet mixture into the dry ingredients, whisking constantly to avoid lumps.
- Finally, add the melted butter. Let the batter rest for 20–30 minutes at room temperature.
- While the batter rests, place the chocolate and cream in a small saucepan. Warm over low heat, stirring constantly until smooth and glossy. Set aside but keep warm.
- Heat a non-stick skillet (8-10 inches) over medium heat and lightly grease with butter.
- Pour about 1/4 cup of batter into the center, tilting the pan in a circular motion so the batter spreads into a thin, even layer. Cook for 1–2 minutes until the edges start to lift and the bottom is golden. Flip and cook for another 30 seconds.
- Transfer to a plate and repeat with the remaining batter, stacking crepes between sheets of parchment.
- Spread a thin layer of warm chocolate filling down the center of each crepe. Roll tightly from one end, then place seam side down on a serving plate.
- Dust with powdered sugar and garnish with fresh berries or chopped nuts if desired. Serve warm for the best experience.
