Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 4 slices sturdy bread (French baguette or sourdough)
  • 3 cloves garlic (minced)
  • 2 green onions (chopped)
  • 4 tbsp unsalted butter (melted)
  • to taste salt and pepper
  • 2 tbsp fresh herbs (parsley or cilantro, finely chopped)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix shrimp, garlic, green onions, melted butter, salt, pepper, and herbs until combined.
  3. Slice bread into 1-inch thick pieces and arrange on a baking sheet. Lightly toast for 5 minutes until golden.
  4. Remove toasted bread from the oven and generously spoon shrimp mixture onto each slice.
  5. Return to the oven and bake for 12-15 minutes until the shrimp are cooked through and edges are crispy.
  6. Garnish with additional herbs before serving warm.
