- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika
- 1/2 teaspoon kosher salt (plus more to taste)
- 1/4 teaspoon freshly ground black pepper
- 2 cups sharp cheddar cheese, shredded (about 8 oz)
- 1/2 cup Monterey Jack cheese, shredded
- 1 teaspoon hot sauce (optional, adjust to taste)
Instructions
- In a medium saucepan over medium heat, melt the unsalted butter.
- Whisk in the all-purpose flour and cook, whisking constantly, for about 1 minute until bubbling but not browned.
- Gradually add the whole milk, whisking constantly to prevent lumps.
- Add Dijon mustard, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper.
- Bring to a simmer and cook for 2-3 minutes until slightly thickened.
- Lower the heat to low.
- Add sharp cheddar cheese and Monterey Jack cheese a handful at a time, whisking after each addition until fully melted and smooth.
- Stir in hot sauce (if using), taste, and add more salt if needed.
- Serve hot with warm pretzels, chips, or veggies.

- This sauce can be adjusted with different types of cheese for varying flavors.
