Delicious and hearty stuffed bell peppers filled with a savory beef and rice mixture.
Ingredients

- 4 to 6 bell peppers (any color, but red and yellow are sweeter)
- 1 pound ground beef (or swap with turkey)
- 1 small onion, diced
- 2 to 3 cloves garlic, minced
- 1 cup cooked rice (white or brown)
- 1 cup marinara or tomato sauce
- 1 to 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 1 to 1 1/2 cups shredded cheese (mozzarella, cheddar, or a mix)
- Olive oil
- Optional: chopped parsley, red pepper flakes
Instructions
- Preheat your oven to 375°F. Lightly oil a baking dish that fits your peppers snugly.
- For the peppers: Slice the tops off, pull out the seeds and white ribs. Trim the bottoms if necessary to avoid tipping.
- Pre bake the peppers for 10 to 12 minutes to help them get tender.
- For the filling: In a large skillet, sauté onion in olive oil until soft, add garlic for about 30 seconds, then add ground beef; season with salt and pepper and cook until browned. Drain excess grease if needed.
- Add rice, marinara, and Italian seasoning. Simmer for 2 to 3 minutes until thickened.
- Fill the peppers with the filling, top with cheese, and bake uncovered for 20 to 25 minutes.
- Let sit for 5 minutes before serving.
Notes
- For a healthier version, substitute ground turkey for beef.
- Feel free to customize the filling with your favorite spices or vegetables.
