  • 1 cup heavy cream
  • 2 cups fresh spinach, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Grated Parmesan cheese, optional

Instructions

  1. Brown the Sausage: Cook the Italian sausage in a skillet over medium heat, breaking it into small pieces until fully browned. Drain excess grease.
  2. Sauté Onion and Garlic: Add the diced onion to the skillet and cook until softened. Stir in the garlic and cook briefly until fragrant.
  3. Build the Soup Base: Transfer the sausage mixture to the slow cooker. Add chicken broth, diced tomatoes, basil, and oregano. Stir well to combine.
  4. Slow Cook: Cover and cook on low for 6 hours or on high for 3 hours, allowing the flavors to blend.
  5. Finish the Soup: About 30 minutes before serving, stir in the tortellini, heavy cream, and spinach. Cook until the tortellini is tender, then season with salt and pepper to taste.
