A deliciously creamy and hearty soup made with Italian sausage and tortellini.

- 1 lb Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 9 oz refrigerated cheese tortellini
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
- Grated Parmesan cheese, optional
Instructions
- Brown the Sausage: Cook the Italian sausage in a skillet over medium heat, breaking it into small pieces until fully browned. Drain excess grease.
- Sauté Onion and Garlic: Add the diced onion to the skillet and cook until softened. Stir in the garlic and cook briefly until fragrant.
- Build the Soup Base: Transfer the sausage mixture to the slow cooker. Add chicken broth, diced tomatoes, basil, and oregano. Stir well to combine.
- Slow Cook: Cover and cook on low for 6 hours or on high for 3 hours, allowing the flavors to blend.
- Finish the Soup: About 30 minutes before serving, stir in the tortellini, heavy cream, and spinach. Cook until the tortellini is tender, then season with salt and pepper to taste.

- For a richer flavor, use homemade chicken broth.
- You can add more vegetables such as carrots or celery for added nutrition.
