Description

A delicious slow cooker meal featuring tender chicken breasts and flavorful potatoes coated in garlic parmesan sauce.


Ingredients

Scale
  • 1 lb chicken breasts (Boneless, skinless, fully thawed)
  • 5 medium potatoes, chopped (Yukon Gold or red potatoes recommended)
  • 2 tbsp olive oil
  • to taste salt
  • to taste pepper
  • to taste garlic powder
  • to taste paprika for potatoes
  • 0 tsp salt (For chicken)
  • 0 tsp black pepper (For chicken)
  • 1 tsp paprika (For chicken)
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic (Fresh recommended)
  • Buffalo Wild Wings Garlic Parmesan Sauce (Enough to coat chicken generously; any garlic Parmesan sauce may be substituted)
  • 1 cup shredded mozzarella cheese (Freshly shredded preferred)

Instructions

  1. Wash and chop potatoes into bite-sized pieces. Toss in a bowl with olive oil, salt, pepper, garlic powder, and paprika until well coated.
  2. Spread seasoned potatoes in an even layer across the bottom of the slow cooker.
  3. Season chicken breasts on both sides with salt, pepper, paprika, onion powder, and Italian seasoning.
  4. Place seasoned chicken breasts on top of the potatoes in a single layer.
  5. Spread minced garlic evenly over each chicken breast, pressing gently to adhere.
  6. Pour enough Buffalo Wild Wings Garlic Parmesan Sauce over the chicken to coat it thoroughly.
  7. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is fully cooked and potatoes are fork-tender.
  8. In the last 30 minutes of cooking, sprinkle shredded mozzarella cheese over the top. Cover and let melt completely.
  9. Shred or slice chicken before serving for better sauce distribution. Garnish with extra Parmesan or fresh parsley if desired.

Notes

  • For best results, use freshly shredded mozzarella cheese.
  • Feel free to substitute the garlic parmesan sauce with your favorite brand.
