Description

A delicious and moist strawberry bread enhanced with cinnamon and coconut oil.


Ingredients

  • 2 teaspoons ground cinnamon

  • 3 tablespoons coconut oil
  • 0 cups plain nonfat Greek yogurt
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cups small diced strawberries
  • 0 cups powdered sugar
  • 0 teaspoons pure vanilla extract
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 350°F. Grease an 8×4-inch loaf pan and line with parchment paper.
  2. In a bowl, combine flour, cinnamon, salt, and baking soda.
  3. In another bowl, mix sugar and melted coconut oil, then add Greek yogurt, eggs, and vanilla.
  4. Fold the wet ingredients into the dry ingredients; gently mix in strawberries.
  5. Pour into the prepared pan and bake for 45-55 minutes or until a toothpick comes out clean.
  6. Cool in the pan before slicing.
  7. Prepare glaze by whisking together powdered sugar, vanilla, and milk until smooth.
  8. Drizzle glaze over Strawberry Bread before serving.
