- 1 tablespoon vegetable oil
- 1 pound ground beef
- 3 garlic cloves, minced
- 1 small red chili, finely sliced (adjust to taste)
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 cup fresh Thai basil leaves
- 1/2 cup shredded carrots
- 1 cucumber, julienned
- 1 red bell pepper, thinly sliced
- 8–10 rice paper wrappers
- 1/4 cup fresh mint leaves
- Sweet chili sauce, for dipping
Instructions
- Heat the vegetable oil in a skillet over medium heat. Add the minced garlic and chili, cooking just until fragrant—about 30 seconds. Then add the ground beef, breaking it up with your spatula. Cook until the beef is fully browned.
- Stir in the soy sauce, fish sauce, and brown sugar. Let everything simmer for a few more minutes, allowing the flavors to soak into the meat. Turn off the heat and toss in the fresh Thai basil.
- Fill a large shallow bowl with warm water. Dip one rice paper wrapper into the water for about 10–15 seconds until it softens. Lay it flat on a clean surface or damp towel.
- In the center of the wrapper, layer a spoonful of the basil beef mixture, a few slices of cucumber, red bell pepper, shredded carrots, and a couple mint leaves. Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly like a burrito.
- Repeat with the remaining ingredients. Serve your Thai Basil Beef Rolls fresh, with a small bowl of sweet chili sauce for dipping. These are best enjoyed immediately while the wrappers are still supple and the vegetables crisp.
