Description
A fresh and flavorful cilantro lime rice, perfect as a side dish.
Ingredients

- 1 cup long-grain white rice (or jasmine rice)
- 2 cups vegetable or chicken broth (or water)
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon butter or olive oil
- Salt to taste
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a saucepan, combine rinsed rice and broth or water. Bring to a boil over medium heat.
- Once boiling, reduce heat to low, cover tightly, and simmer for 18-20 minutes without lifting the lid.
- Remove from heat and let sit for 5 minutes before fluffing with a fork.
- Stir in butter or olive oil, chopped cilantro, and lime juice. Adjust lime juice according to taste.
- Serve warm as a side dish or garnish with extra cilantro.
Notes
- For a more intense lime flavor, add more lime juice.
- This rice pairs well with Mexican and Asian dishes.
