Description

Soft and chewy chocolate chip cookies with a delicious blend of flavors and textures.


Ingredients

Scale
  • 3 cups (360 g) all-purpose flour (spooned and leveled)
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 16 Tablespoons (2 sticks, 226 g) unsalted butter, (cool room temperature)
  • 1 cup (213 g) packed light brown sugar
  • ½ cup (100 g) granulated sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 1 ½ cups (10 ounces) semi-sweet chopped chocolate
  • Flaky sea salt (optional for topping)

Instructions

  1. Combine dry ingredients. In a large bowl, whisk flour, cornstarch, baking soda, and salt. Set aside.
  2. Combine wet ingredients. In a stand mixer fitted with a paddle attachment beat softened butter with sugars for 3-4 minutes on medium speed until creamy. Mix in eggs one at a time on medium speed until combined. Add vanilla and mix until just incorporated.
  3. Add dry ingredients. Add flour mixture and mix on low until just combined. Add chocolate chips and mix on low speed to combine. Dough will be very thick.
  4. Shape dough. Scoop 1/3 cup portions. I use a large cookie scoop (#12). Chill cookie dough balls. Cover and refrigerate at least 2 hours, preferably 24 hours.
  5. Prepare oven and pan. Position a rack in the center of the oven. Preheat the oven to 350°F (190°C). Prepare a cookie sheet with parchment paper.
  6. Bake cookies. Place 6 cookie dough balls on a baking sheet spaced a few inches apart. Bake 12-14 minutes until edges are golden brown and centers should look slightly underbaked. Remove from the oven. Take a large round cookie cutter or coffee mug and place over each cookie and rotate to make cookies circular. Top each cookie with a few additional chocolate chips. Let cool on the cookie sheet for 5 minutes then transfer to a wire rack. Top with sea salt before enjoying.
