Description

This cheesy beef dip is perfect for parties and gatherings, made with ground beef, Velveeta cheese, and a blend of flavorful seasonings.


Ingredients

Scale
  • 1 lb ground beef (lean, medium, or extra lean)
  • 1 tbsp taco seasoning (or 1/2 tsp each chili powder, garlic powder, onion powder, paprika, cumin)
  • 1 can (10 ounces) Rotel (or 1 can diced tomatoes with chilies)
  • 1 brick (2 cups, 16 ounces) Velveeta cheese, cubed
  • 1 cup diced tomatoes
  • 1/4 cup freshly parsley or cilantro, chopped
  • 1/4 cup green onions, chopped

Instructions

  1. Heat a large skillet or frying pan to medium heat. Add the ground beef and break it apart with a wooden spoon. Cook until no pink remains and meat is cooked through, approximately 5 minutes. Drain any excess fat.
  2. Reduce the heat to medium and add in the taco seasoning and can of Rotel with juices. Cook for 2-3 minutes or until fully combined and the sauce is simmering; reserve 1 tbsp of the diced tomatoes to garnish the dip before serving.
  3. Add in the cubed Velveeta cheese. Stir continuously until the cheese is fully melted.
  4. Optional: garnish the dip with the reserved diced tomatoes, chopped parsley or cilantro, and/or sliced green onions. Serve immediately with tortilla chips, crostini, or toasted baguettes to dip and enjoy!

Notes

  • This dip pairs wonderfully with tortilla chips for a great appetizer.
